1 large yellow onion
1 small fennel
3 cloves of garlic
1 glass of white port

1 tbsp mustard
2 tbsp tarragon, finely chopped
2 tbsp fresh mayonnaise
a splash of water
1 bunch of flat-leaf parsley, finely chopped
