What do you need?

Quantity:

Pancake:
500 ml milk
4 eggs
2 tbsp sugar
2 tsp salt
240 g flour
2 tbsp hazelnut oil
3 handfuls of fresh herbs (we used sorrel, sea aster or saltwort, young fennel flower heads) but also think of spinach, arugula, dill, basil…

Topping:
200 g smoked bacon, cooked
3 nectarines, sliced
1 handful of cherries
2 tbsp honey

Preparation method

How do you make this?

Put all the ingredients with the picked herbs in a blender and blend everything finely.

Heat the pans, grease them with oil, and cook all the batter over medium heat.

Fold them onto a plate.

Finish with flowers, sliced nectarines, cherries, crispy bacon bits, honey, and fennel heads.

Season with Santa Maria Chili Explosion.
