700 ml cold milk
30 g butter
40 g flour
Pinch of white pepper
Pinch of salt
Nutmeg
150 g grated Gruyère

Preparation method

How do you make this?

Let the butter melt and foam well in a high pot.

Add all the flour at once and mix everything vigorously so that the flour and butter are well combined.

Let it cook for another 2 minutes so you don't get a flour taste.

Add half of the cold milk and whisk vigorously to remove the lumps and stir until you have a smooth thick mass.

Now add the rest of the milk and whisk until you have a thick white sauce.

Season with pepper, salt, and grate some nutmeg in.

You can optionally add a few drops of lemon juice to freshen up the sauce.

Now mix in about ¾ of the cheese until it is nicely melted.

Use it in lasagnas, in pasta, over steamed vegetables, and finish with the extra cheese.
