Finely chop the nuts and chop chili and spring onion.
Peel the onion, carrot and garlic and cut into fine sloping strips.
Fry everything briefly and powerfully in a wok in 2 tbsp peanut oil, keep aside.
Beat the eggs with pinch of salt and bake briefly with a dash of oil while stirring, put aside.
Cook the noodles as on the package, rinse them well and let them drain.
Put the fish sauce, the tamarindepasta and sugar in the wok and let it boil briefly.
Add the boiled noodles and mix well, add juice of 1 lime, it had to be too firmly add a dash of warm water, stir in the soy sprouts and eggs and divide on the plates.
Finish with nuts coriander spring onion chili and half a lime.
If you have children, they usually eat the noodles, soy, carrot, eggs and nuts. Let them choose for yourself if they want the chili and coriander.
That is why I like to serve everything that is mixed separately on plate instead of everything.
That actually looks nicer too 😉
