400 ml quality canned cherry tomatoes
1 tsp smoked paprika powder
1 tsp coriander seeds
1 tbsp dried crispy onions
150 g spinach
2 spring onions
1 tsp chili flakes
2 fresh eggs

Preparation method

How do you make this?

Crush the coriander seeds in a mortar, pour them into your pan and let them roast without fat until they start to smoke lightly and release their aroma.

Add 2 good tablespoons of olive oil, add the spinach and let it wilt a bit, not completely.

Now pour in the canned tomatoes.

Season with salt and pepper, let it simmer for a moment, make 2 wells and crack the 2 eggs into them.

Cover with a lid and let warm gently for 3 to 4 minutes.

Meanwhile, finely chop the spring onions, sprinkle them on top along with chili and crispy onions.

Sprinkle some more smoked paprika powder over it and drizzle the whole thing with olive oil.
