200 g diced butternut squash
150 g diced celeriac
2 handfuls of spinach
1 package of mozzarella balls
4 eggs
Salt and pepper
150 ml cream (can also be plant-based cream, such as coconut)
1 bunch of coriander

Preparation method

How do you make this?

Mix the diced squash and celeriac with some oil and salt and pepper.

Grill them in a baking dish for 15 minutes at 200°C.

Chop the spinach roughly.

Beat the eggs. Season with salt and pepper and stir in the cream.

Drain the mozzarella.

Mix the spinach with the grilled vegetables in the baking dish.

Pour the egg mixture over it and mix.

Arrange the mozzarella on top.

Bake for 15 minutes at 190°C in the air fryer.

Serve with roughly chopped coriander.
