FISH BURGER
2 eggs
pepper and salt
150 g unsweetened cornflakes
800 g cod, or other fish without bones or skin; ask your fishmonger for advice
plate of flour, for breading
canola oil, for frying the fish
8 slices of cheddar cheese
8 hamburger buns
1 heart of lettuce, washed

TARTAR SAUCE
250 g fresh mayonnaise
2 tablespoons finely chopped parsley
2 tablespoons finely chopped tarragon
1 finely chopped shallot
1 tablespoon finely chopped capers
1 finely chopped sweet pickle

Preparation method

How do you make this?

Mix all the ingredients for the tartar together. Depending on my time and mood, I use fresh or dried herbs.

Preheat the oven to 200 °C.

Beat the eggs with pepper and salt in a deep plate.

Roll over the cornflakes with a rolling pin or chop them finer.

Pat the fish fillets dry, season with pepper and salt on both sides.

Prepare three deep plates with flour, eggs, and cornflakes. First dip the fish in the flour, then in the eggs, and finally in the cornflakes.

Fry the fish in a layer of hot canola oil for a total of 4 to 5 minutes on both sides until crispy in the pan.

Place the fried fish on paper towels for a moment.

Slice the buns open and place them in the oven for another 2 to 3 minutes so that they are warmed up.

Place the lettuce on the grilled bun, then add the fish, sauce, and cheese, and close with the top bun. Serve immediately.

Put the baking tray with buns, tartar, and salad on the table and let everyone help themselves.
