Make Tzatziki: 1. Grate the cucumber above a nettle cloth (webshop) or clean tea towel. Squeeze out the excess juice and keep the juice to drink with a little lemon juice. Tasty! 2. Mix the drained cucumber with the flat cheese, finely chopped dill, mint, garlic (finely pressed), olive oil, pepper and salt. Put in the refrigerator to let the 3 flavors withdraw.
Preparing Halloumi: 1. Cut the halloumi into slices. Heat a pan with 2 tbsp olive oil. Bake the Halloumi slices short and powerfully golden brown on both sides. 2. Reduce the heat, add the chili oil and honey and let the Halloumi briefly caramelize. Make sure you turn the slices well so that they absorb the taste on both sides.
Filling wrap: 1. Heat the wraps briefly in a dry pan or oven. 2. Spread the wrap generously with Tzatziki. Put the caramelized halloumi on it and some sauce in the pan. 3. Finish with pomegranate seeds and extra mint leaves.
Serve: Fold the wrap closed and serve immediately. Be prepared for a drop hazard - but that is part of it!
