1 dried chipotle pepper
250 ml corn oil
Juice of 1 lemon
1 tsp salt
1 egg yolk / 1 egg

Preparation method

How do you make this?

Chop the chipotle coarsely, with seeds, remove the stem. Place in a tall measuring cup with the lemon juice, let soak for 10 min so the pepper can rehydrate.

Add the yolk and half of the egg white along with the oil and salt. Place the immersion blender at the bottom and start mixing, staying at the bottom at first.

Once the mayonnaise starts to bind, you can move up and down until everything is mixed together. Place in a jar with a lid and store for up to 2 weeks in the refrigerator.
