Dough
2 eggs
35 g fine sugar
1 Sniff salt
1 TL Vanilla Essence
100 g flower
275 g milk
40 g melted butter + extra to bake
1 tsp natural red colorant powder or gel
500 g fresh strawberries

Filling
250 g mascarpone
50 g sugar
250 ml whipped cream
1 bag of vanilla sugar
1 vanilla sock

Sprinkles and flower sugar to finish

Preparation method

How do you make this?

Put all the ingredients for the pancakes in a high measuring cup and mix 2 to 3 minutes into a smooth dough with a hand blender. To keep the beautiful pink color, bake the pancakes best on medium fire, not too hot. Warm up a pan, rub in with a little butter and then bake 6 nice round smooth pancakes. Stack, cover and let it cool down completely.

Put all the ingredients for the filling in a large bowl and beat firmly. Now explain the 6 pancakes in a rectangle for you. Spread 2/3 of the filling nicely in rectangle, stay 1 cm away from the edge. Cut half of the strawberries into four and divide in lines on top. Pleat the sides 1 or 2 cm inwards so that you get a nice rectangle. Then roll it up completely and make sure that the end is at the bottom.

Place it on a dish. Spray the rest of the mascarpone in florets on it, decorate with strawberries, sprinkles and sieve some flower sugar. Allow to cool for at least 1 hour in fridge before serving. Cut into 4 equal parts and serve with the rest of the strawberries.
