American:
750 gr. ground beef
4 yolks
200 ml peanut oil
1 tsp ground pepper
1 tsp fine sea salt
3 tsp mustard
3 tbsp finely chopped onion
3 tbsp finely chopped parsley
1 tbsp capers
1 tsp tabasco
2 tbsp Worcestershire sauce

Straw potatoes:
600 g frying potatoes
beef fat

3 large pickles finely chopped
1 jar homemade mayonnaise
1 heart of a head of lettuce, finely chopped
1 bunch lamb's lettuce

American:
750 gr. ground beef
4 yolks
200 ml peanut oil
1 tsp ground pepper
1 tsp fine sea salt
3 tsp mustard
3 tbsp finely chopped onion
3 tbsp finely chopped parsley
1 tbsp capers
1 tsp tabasco
2 tbsp Worcestershire sauce

Straw potatoes:
600 g frying potatoes
beef fat

Preparation method

How do you make this?

Separate the eggs and place the yolks in a bowl. Add pepper and salt.

Slowly stir in the oil until you reach the desired thickness.

Add 3 teaspoons of mustard, finely chopped onion, parsley, capers, tabasco, and Worcestershire sauce and mix well together.

Then mix in the ground beef.

Place in the refrigerator.

Straw potatoes

Peel the potatoes and slice them very thinly with a mandoline, then cut them into very fine straw potatoes (straw fries).

Wash them in a bowl and drain in a sieve. Rinse well to remove all the starch. Dry thoroughly.

Heat frying fat to 150 to 160 degrees.

Fry the straw potatoes for about 3 minutes, stirring regularly with a meat fork until they are nice and crispy.

Drain on kitchen paper. These straw fries are not pre-cooked first.
