Vacuum-packed pears: Peel the pears (or not), cut them in half and remove the core.
Place in a bag with all the other ingredients and vacuum seal.
Steam for 45’ at 95°, then place in an ice bath.
Now the pear is ready for use, it is cooked and can be eaten cold or warmed up.
Reheating is also very tasty by the way.
Pancakes: Put the flour, salt, sugar, and the pulp from the vanilla pods in a large bowl.
Add just under half of the milk and whisk everything until you have a thick smooth batter.
Now add the eggs and mix, then add the rest of the milk. Do you have lumps? No panic, just use an immersion blender.
Heat a frying pan over the fire, and add a small splash of vegetable oil.
Let it swirl around well or spread it out with a brush.
When the pan is hot enough, pour a ladle of batter into the pan and make a circular motion to get an even round pancake.
Let it bake for a minute, when the top of the batter no longer looks raw, you can flip it and bake for another minute until it looks golden brown.
Continue baking the rest of the batter until you have pancakes.
Place 2 pancakes per plate, put a dollop of yogurt on each pancake, slice the pears in a fan shape, place them on the pancake as well, and finish off with finely chopped mint.
