Cut the nori into smaller strips and put it together with the sesame seeds in a cutter, chop finely.
Cut the cucumber lengthwise in half and then in half again, scoop out the seeds. Fill it with the rice.
Mix the salmon cubes with sriracha and soy sauce and spread it on top. Arrange the avocado on top and finish with the furikake.
Drizzle with some extra soy sauce if desired.
Furi-what? Yes, furikake! This delicious Japanese topping can normally also be made with bonito and wasabi and such, but I just make it super easy myself with nori sheets and mixed sesame seeds, because you can easily find those in the store.
