4 heads of butter lettuce
250g peas (or frozen)
1 bunch of spring onions
1 lemon
30g butter
2 tbsp sunflower oil
pepper and salt

Preparation method

How do you make this?

Submerge the peas in boiling water and drain them as soon as the water starts boiling again. Shock them in ice-cold water.

Remove the outer leaves of the butter lettuce (keep them to make soup). Cut the lettuce hearts into 4 and sauté them until golden brown on all sides over fairly high heat in a large roasting pan with the melted butter. Season them and remove from the pan.

Trim the spring onions a bit and sauté them until golden brown in the same pan, adding sunflower oil. Add the drained peas, season, mix for 1 min., and remove from heat. Put the lettuce hearts back in the roasting pan.

Drizzle with lemon juice and serve warm as a side dish with chicken, grilled fish, ...
