1 pork ham
2 pieces of meat ribs or spare ribs
1 tbsp lard
1 onion
3 carrots
2 stalks of white leek
4 stalks of celery, washed
2 turnips
2 butter turnips
1 thick parsnip
700 g floury potatoes
Thyme & bay leaf
Pepper and salt
1.2 L pork broth or chicken (pork broth recipe)
Flat parsley and mustard for finishing

Preparation method

How do you make this?

Sauté the chopped onions in the lard.

Add the celery and leek cut into strips, let it stew.

Meanwhile, peel the carrots, turnips, parsnip, and potatoes, add them, and season with pepper and salt.

Add plenty of thyme and bay leaf and add the ribs and shank.

Pour the broth over it and let it simmer gently for at least 1h30.

Remove the meat, you can mash the vegetables a bit finer with a masher if you want, but it's not necessary.

Serve a good scoop of hutsepot on the plates along with a piece of ham and ribs and finish with some flat parsley.

Serve with strong mustard.
