Wash the apple and peel the carrot.
Grate the carrots and apple in a large bowl.
Season with pepper and salt and add oil and apple cider vinegar. The vinegar and salt will draw moisture from the apples and carrots.
Pour the mixture into a sieve and press a bit to remove excess moisture.
Spread the goat cheese over the 8 slices.
Generously top 4 slices with fricandon, carrot salad, and pickles.
Place the top slice on, press down, cut in half, pack it up, and put it in your lunchbox.
