Sauté chopped onion and garlic in oil. Cut all vegetables into small cubes of 1 cm. Remove the seeds from the bell peppers.
Add the tomato paste and let it cook for a bit, then add dry herbs, pepper, and salt along with all other ingredients and let it stew for 20 minutes with the lid on, taste again and adjust seasoning if necessary, and it's ready.
You can freeze it or simply prepare it with pasta.
