Soak or cook the noodles as indicated on the package, rinse well.
Peel the carrot and cut it into fine julienne. Chop the white cabbage and spring onion finely.
Chop the onion and garlic finely and sauté for 2 to 3 minutes in the oil, add the minced meat, breaking it down until everything is fine. Add the carrot and cabbage along with all the sauces, let everything cook for about 4 minutes while stirring.
Fold the noodles in, mix well and finish with spring onion.
Serve with some hot sauce if you like it spicy.
