Ingredients

What do you need?

Quantity: 4p

2 l water
20 g black tea
200 g unrefined sugar
1 scoby (mushroom)

2 l water
20 g black tea
200 g unrefined sugar
1 scoby (mushroom)

Preparation method

How do you make this?

Heat the water to 90°C, then add the tea and sugar and let it steep for 20 min.

Strain, pour into a clean glass jar, and add the scoby. Be careful: The tea should not be warmer than 40°C, otherwise the scoby will die. So wait until it has completely cooled down.

Store at room temperature for about 2 weeks until the flavor is at its maximum.

When it is ripe, pour it into bottles with fruit or herbs of your choice for the second fermentation. Keep cold.
