Zucchini:
4 zucchinis (mixed yellow and green)
Pepper and salt
Splash of olive oil

Toppings:
2 tablespoons capers
1 tomato
4 handfuls arugula

Tonato sauce:
300 g tuna in its own juice, drained
2 hard-boiled eggs
6 anchovy fillets
Pepper and salt
Juice of 1 lemon
2 tablespoons olive oil
2 tablespoons mayonnaise (preferably homemade)
1 teaspoon capers
The flesh of 1 tomato (seeds and inside)
75 ml chicken or vegetable broth

Preparation method

How do you make this?

Preparing the zucchini: Cut the zucchinis into slices. Season with pepper and salt and drizzle with a splash of olive oil.

Grilling: Heat a grill pan or barbecue and grill the zucchinis on both sides until they have nice grill marks and are soft. Then distribute them on the plates.

Making the tonato sauce: Cut the tomato into quarters and remove the flesh. Put the tomato flesh together with the tuna, hard-boiled eggs, anchovy fillets, lemon juice, olive oil, mayonnaise, capers, and broth in a food processor. Blend until smooth and creamy. Taste and season with pepper and salt.

Finishing: Spread the tonato sauce over the grilled zucchinis. Garnish with capers, slices of tomato, and arugula.
