500 g floury potatoes
a knob of butter
1 large sweet onion
1 tsp sherry vinegar
salt and pepper
1 jar of sour cream
a splash of milk

Preparation method

How do you make this?

Scrub the potatoes clean and steam them in their skins.

Peel the onion and chop finely. Sauté gently in light-colored butter and deglaze with a splash of vinegar.

Reduce the heat and let it color for about 5 minutes with a lid on. Add a splash of water if it gets too dry.

Peel the potatoes.

Add 2 tbsp of sour cream to the onions, mix and pour into the cutter.

Add the peeled potatoes in pieces and blend until smooth, so you can pipe dots. Add a splash of milk if necessary.

Put the potato cream in a piping bag and keep warm.

Refresh your hands with half a lemon and dry them with a cloth.

Pipe a dot in line with your thumb.
