Caramelizing onion: Slice the onion into thin rings and sauté them over low heat in 1 tablespoon of olive oil. Stir regularly until they are deep brown and caramelized. This takes about 20-25 minutes.
Cooking pasta: Cook the pasta according to the instructions on the package.
Sautéing mushrooms: Tear the oyster mushrooms into strips. Add another tablespoon of olive oil to the pan with the onion and sauté the mushrooms until golden brown.
Seasoning & sauce: Stir the tomato paste and smoked paprika powder into the mushrooms and sauté for a moment. Then add the heavy cream and most of the Pecorino.
Combining: Mix the cooked pasta and crispy chili oil into the sauce. Stir well and serve immediately.
Finishing: Finish with extra Pecorino and chili oil to taste.
