600 g pumpkin of your choice
200 g feta
Arugula
Pepper and salt
1 tsp curry powder
1 tbsp mustard
1 red onion + 200 ml white vinegar
200 ml corn oil
1 handful of raisins
1 orange

Preparation method

How do you make this?

Peel the pumpkin, cut it in half, and slice it very thinly. Then cut those slices into fine strips, place them on a large platter, season with pepper and salt. Then drizzle with the oil and curry powder and add the mustard. Grate the zest of the orange over it and squeeze in the juice, mix well and let it sit for a while.

Peel the onion, cut it in half and slice it into fine strips. Put everything in a bowl and pour the vinegar over it, let it sit for a while.

Mix the arugula with the pumpkin, crumble the feta over it, and also distribute the onion and vinegar underneath. Mix well once more and finish with the raisins.

Also very tasty the next day, as it will be even better marinated!
