1x Hollandaise sauce
1 bunch of fresh tarragon
100 ml white wine vinegar

Preparation method

How do you make this?

Pluck the tarragon leaves from the stiff stems, place them in a jar and pour vinegar over them, pressing the tarragon down well.

Prepare the Hollandaise sauce. Gently squeeze the tarragon leaves, chop them finely and stir them into the Hollandaise sauce. Taste and season with extra pepper and salt if necessary. Keep the sauce warm in a bain-marie.
