2 thick slices of sourdough bread, preferably whole grain
1 ripe avocado
2 free-range eggs

For the coriander pesto:
1 bunch of coriander
0.5 bunch of flat-leaf parsley
80 g freshly grated Parmesan cheese
1 clove of garlic
Juice and zest of 1 lime
1 handful of toasted sesame seeds
0.5 chili pepper (or to taste)
100 ml mild olive oil
A pinch of salt

Extra:
Extra coriander for garnish

2 free-range eggs

0.5 bunch of flat-leaf parsley
80 g freshly grated Parmesan cheese

Juice and zest of 1 lime
1 handful of toasted sesame seeds
0.5 chili pepper (or to taste)
100 ml mild olive oil
A pinch of salt

Extra coriander for garnish

Preparation method

How do you make this?

Pesto: Place all the ingredients for the pesto in a food processor and blend until you have a creamy pesto with some texture. Taste and adjust the seasoning if necessary.

Toast: Generously spread the slices of bread with the pesto, ensuring the crusts are also covered. Place them in the basket of the Airfryer and toast for 6-7 minutes at 200°C on high airflow, until the pesto is nicely colored and the bread is crispy.

Eggs: Drizzle some oil and 2 teaspoons of pesto into the baking accessory and heat it for 2 minutes at 200°C. Crack the eggs in and cook for 3-4 minutes, depending on the size of the eggs and your desired doneness. Season with pepper and salt.

Slice the avocado and distribute it over the pesto toast. Place the fried eggs on top and garnish with extra coriander.

Serve immediately.
