2 handfuls of fresh herbs: rosemary, chervil, oregano, parsley, thyme, tarragon…
1 tbsp sour cream or yogurt
A knob of butter
Pepper from the grinder
Salt
2 slices of white bread (sourdough)
2 tbsp ketchup

Preparation method

How do you make this?

I am crazy about fresh herbs; they can make simple dishes so tasty. This recipe is quite no-nonsense, but the fragrant herbs provide an extra twist.

Mix the eggs, fresh herbs, and sour cream or yogurt in a blender or with a mixer until you have a green mixture.

Cook the omelet with a knob of butter in a large pan. Season with pepper and salt.

Cut the omelet into long strips that are the same width as the bread.

Serve folded between a slice of crustless bread spread with a layer of ketchup.
