3 yolks
2 half egg cups of sugar per person
4 half caps Dry white wine
Optionally: Marsala, eau de vie, liqueur
2 balls of ice cream

Preparation method

How do you make this?

Put the yolks in the pan and measure the sugar and wine in an egg cup.

Beat everything well and put it on medium heat.

Beat without stopping, also turn your saucepan so that you beat the entire surface of the pan and be avoided. This takes about 3 minutes.

The sabayon is ready when it is nice and firm and airy. Draw a stripe on the bottom of the saucepan; If there is no longer a liquid egg mixture, it is ready.

As soon as it beats well and slightly steams, add the chosen liqueur. Beat, remove from the heat and keep beating.

Divide the sabayon into two glasses with a ball of vanilla cream ice in it. Serve immediately and enjoy!
