180 to 230 g raclette cheese pp: Belgian, Swiss, Jura Kazen BV…
120 g Charcuterie pp: bacon, grison, raw ham, smoked dried bacon ... no too cool species, raw, dried and smoked or seasoned are ideal.

Rosemary butter:
125 g soft butter
Juice and sixth of ½ lemon
Peper van de Molen, Fleur de Sel
2 tbsp rosemary leaves finely chopped
2 cloves of look grated
2 handful of parsley chopped

Fennel pear salad:
1 fennel washed
2 hard pears washed
1 handful of grapes washed
4 tbsp apple cider vinegar
2 tbsp neutral oil eg rapeseed oil
Black pepper mill
Fleur de Sel
1 handful of occluding sliced
1 shallot cut into rings

1 bowl of small white mushrooms cut into discs
1 large onion cut into fine rings
3 to 4 stumps of chicory cut into strips

Preparation method

How do you make this?

Steam the potatoes, keep them warm.

Make the pickled cucumber.

For the rosemary butter you mix all the ingredients under each other, place baking paper on a circle and fold.

For the salad, first chop the shallot and add the apple cider vinegar. Let it pull.

Finely chop the pear and fennel, the grapes in half the nuts in slices.

Add to the shallot, season with salt and pepper and mix in the oil.

Cut the mushrooms, onion and chicory into slices, place the cheese and charcuterie on boards.

Put everything on the table and enjoy!

That's how I proceed:

I use the butter to bake the mushrooms, chicory or onion in the pans, then put a slice of cheese on top and let it melt.

Pour it on an open sliced ​​potato with a slice of charcuterie.

I eat the fresh lettuce and also some onions and pickles.

And also a fresh red wine, dry white wine or geuze eg.
