What do you need?

Américain:
750 gr. ground steak
4 yolks
200 ml peanut oil
1 kl ground pepper
1 tsp fine sea salt
3 Kl mustard
3 tbsp finely chopped onion
3 tbsp finely chopped parsley
1 tbsp capers
1 KL Tabasco
2 tbsp Worcestershiresauce

Straw potatoes:
600 g of fries potatoes
Ossevet

3 large pickles finely chopped
1 pot of homemade mayonnaise
1 heart of a head lettuce, finely cut
1 bone lamb's lettuce

Américain:

Preparation method

How do you make this?

American

Split the eggs and put the egg yolks in a bowl. Add salt and pepper.

Stir the oil slowly until you get the desired thickness.

Add 3 coffee spoons mustard, finely chopped onion, parsley, capers, tabasco and worcestershiresauce and mix well together.

Then mix in the ground steak.

Put in a fridge.

Straw potatoes

Peel the potatoes and cut them into very fine slices with a mandolin and then in very fine straw potatoes (streamrofietjes).

Wash them in a bowl and pour them into a sieve. Rinse all the starch again. Dry well.

Heat fries fat at 150 to 160 degrees.

Bake the straw potatoes for about 3 minutes and regularly stir loose with a meat fork until they are nice and crispy.

Pour out kitchen paper. These straw strides are therefore not first poached.
