1.5 kg wild boar loin or roast (about 5 centimeters thick)
1.5 tbsp pink pepper
3 tbsp black pepper
fleur de sel
2 tbsp butter

Preparation method

How do you make this?

Preheat the oven to 190 °C.

Make diagonal cuts of 2 millimeters deep on the top or on the membrane of the meat. This allows the meat to cook evenly.

Crush the 2 types of pepper coarsely in a mortar.

Press the meat into one side.

Melt a knob of butter.

Sear the meat first on the peppered side for 2 minutes.

Carefully turn and sear the other side for another 2 minutes.

Place the meat with the peppered side facing up in a baking dish and bake for another 3 minutes in the oven at 190 °C.

Remove from the oven.

Let it rest for at least 2 minutes under aluminum foil.
