Place all ingredients in a tall measuring cup and mix for 3-4 minutes until you have a smooth and homogeneous batter.
Lay the bacon slices on a baking sheet with a silicone baking mat. Mix the honey with the smoked paprika powder and spread a teaspoon of honey over each slice of bacon. Brush it evenly.
Bake the bacon for 10-12 minutes at 180°C until nicely caramelized. Keep warm.
Preheat your waffle iron to setting 4 and lightly grease it once it’s warm.
Pour the batter into the waffle iron and bake for about 4 minutes, until the waffles are golden brown. Place them on a cooling rack.
Repeat this process with the remaining batter, greasing the waffle iron again each time before pouring in the batter.
Place 2 slices of bacon on each waffle and drizzle some extra smoked honey over it.
Serve immediately.
