2 bunches of radishes with greens
4 thick slices of sourdough bread
500 g cream cheese
3 spring onions

No waste pesto:
The greens from 1 bunch of radishes
80 g freshly grated Parmesan cheese
Pepper and salt
Juice of 1 lemon
5-6 tbsp mild oil
Zest of a whole lemon
1 clove of garlic, grated
2 tbsp roasted pine nuts
1 tsp fresh thyme
1 tsp fresh oregano

4 thick slices of sourdough bread
500 g cream cheese

No waste pesto:
The greens from 1 bunch of radishes
80 g freshly grated Parmesan cheese
Pepper and salt
Juice of 1 lemon
5-6 tbsp mild oil
Zest of a whole lemon
1 clove of garlic, grated
2 tbsp roasted pine nuts
1 tsp fresh thyme
1 tsp fresh oregano

Preparation method

How do you make this?

Slice the radishes into rounds using a mandoline.

Finely chop the greens from half the radishes and place them in a bowl.

Put the pine nuts in a mortar or chop them finely.

Grate the Parmesan and garlic into the radish greens.

Add the zest and juice of a whole lemon and oil.

Mix everything well together.

Season with pepper and salt.

Finely chop the oregano and thyme and add them.

Generously top the bread with cream cheese and radishes and finish with the pesto.

Finely chop the spring onion and sprinkle over the top.
