Puff pastry base:
1 round sheet of puff pastry (preferably with butter)
1 tablespoon sunflower seeds
1 tablespoon sesame seeds
1 tablespoon pumpkin seeds
1 egg yolk, beaten with 1 tablespoon milk
1 sprig of rosemary, leaves stripped

Cheese mixture:
3 boxes of Madame Loïk cheese (or another fresh cream cheese)
3 spring onions, finely chopped
1 teaspoon pink peppercorns, coarsely ground
1 teaspoon black peppercorns, coarsely ground

Toppings:
1 box of large green olives
1 bunch of white grapes, washed
1 handful of Brazil nuts
1 box of black olives
6 slices of mortadella
8 dried sausages, finely chopped
8 dried figs, halved
1 handful of mixed nuts of your choice
1 conference pear, sliced thinly
Edible flowers or fresh herbs (e.g. thyme or basil)

Preparation method

How do you make this?

Preparing the puff pastry: Preheat the oven to 180 °C. Roll out the puff pastry and place a small plate in the center. Cut a circle out of the middle and divide it into 8 small triangles.

Forming the wreath: Place the cut triangles around the outer edge of the puff pastry wreath. Brush the entire wreath with the egg yolk-milk mixture and sprinkle with sunflower seeds, sesame seeds, pumpkin seeds, and the rosemary leaves.

Baking: Bake the puff pastry wreath for 20 minutes in the preheated oven until golden brown and crispy. Then let it cool completely.

Cheese mixture: Place the Madame Loïk cheese in a bowl, add the chopped spring onions and the pink and black pepper. Mix well and scoop the mixture into a piping bag with a round nozzle.

Presentation: Pipe the cheese mixture in small dollops over the cooled puff pastry wreath. Distribute the olives, grapes, Brazil nuts, mortadella, dried sausages, figs, mixed nuts, and pear slices around the cheese dollops.

Finishing: Garnish with edible flowers or fresh herbs for a colorful finishing touch.

Serving: Serve the puff pastry wreath immediately and enjoy the combination of crispy, creamy, sweet, and salty.
