Cut the broccoli into florets and peel the stem, also cut that into pieces. Cook or steam the broccoli until it is nice and soft.
Cook the macaroni as instructed on the package, in well-salted water. Drain and reserve about 400 ml of the cooking water.
Put the steamed broccoli, burrata, basil, Parmesan cheese, and half of the grated Emmental cheese in a blender or high measuring cup. Season well with pepper and salt. Add a splash of cooking water and blend everything into a deliciously creamy, green broccoli cheese sauce.
Put the sauce back in the large pot and mix it well with the macaroni. Also add the sliced ham.
Serve immediately and finish with the rest of the grated Emmental cheese.
You can also put everything in a baking dish, sprinkle extra cheese on top, and let it gratin in the oven. This way you can serve the dish whenever you want.
