250 g chestnut mushrooms
150 g smoked bacon strips
250 ml red wine
350 ml beef broth
150 g small fresh pearl onions
1 tbsp tomato paste
1 tbsp flour
A sprig of thyme
A generous knob of butter
Pepper and salt
1 shallot

Preparation method

How do you make this?

Peel the pearl onions and cut the mushrooms into quarters. Sauté the bacon in a pan without any fat until nicely colored. Add the quartered mushrooms and fry for another 4 to 5 minutes. Set aside.

In the same pan, sauté the finely chopped shallot together with the bacon. Add the flour all at once and stir well until no flour is visible anymore, then remove from heat and add the wine and tomato paste, stirring everything well to combine.

Add the broth and the rest of the ingredients and return to the heat, bring to a boil and then let simmer for 8 to 10 minutes until the onions are soft, taste and season if necessary. If your sauce is too thick, add some extra broth.
