Quantity: 1 banana bread

3 eggs
300 grams of ripe bananas (about 2-3 bananas), weighed without the peel
1 banana for decoration
1 teaspoon of cinnamon
A pinch of salt
70 grams of gluten-free oats
80 grams of shredded coconut
1 teaspoon of baking powder
100 grams of dark chocolate, at least 70% cocoa, chopped
20 grams of fresh ginger, grated

Preparation method

How do you make this?

Mash the 300 grams of banana into a puree in a large bowl. Add the grated ginger, salt, cinnamon, and baking powder and mix everything well together.

Beat the eggs and mix them into the banana mixture. Then add the oats and shredded coconut and mix until you have a homogeneous batter.

Fold the pieces of dark chocolate into the batter.

Grease a baking pan or line it with baking paper. Pour the batter into the pan.

Cut the extra banana in half lengthwise and place it cut side up on the batter. Lightly brush with some oil.

Bake the banana bread for about 40 minutes in a preheated oven at 180°C.

Let the bread cool before slicing. Serve warm or cold.
