Wash your hands.
Put all the ingredients for the cookies in a large bowl and knead with your hands until you can form a ball, flatten it, wrap it in cling film, and let it set in the fridge for at least 2 hours.
Take it out of the fridge 10 minutes before you want to roll out the dough, roll it out between 2 sheets of baking paper to about 0.5 cm thick, poke holes in it and cut out the desired shapes.
Carefully place them on a baking sheet lined with baking paper and bake for 20 to 25 minutes until dry at 155°C.
Let cool.
Meanwhile, mix the fondant with the different colorings.
If you are using icing sugar: put a heap of icing sugar in a bowl, add a tablespoon of egg white and a few drops of lemon juice.
Whisk well, along with some food coloring.
Decorate the cookies to your heart's content…
