For the brownie:
2 eggs
85 g coconut blossom sugar
Pulp of 1 vanilla pod
200 g almond flour
50 g cocoa powder
1 tsp baking powder
Pinch of salt
125 ml milk
100 ml melted coconut oil

Lemon-vanilla-thyme pears:
2 sprigs of fresh thyme
Zest of 1 lemon
50 ml honey
Pulp of 1 vanilla pod
3 conference pears

For serving:
250 ml vanilla sauce (vanilla anglaise)
Powdered sugar, for garnish
Sprig of fresh thyme

Preparation method

How do you make this?

Preparing the pears: Peel the pears, halve them and remove the core, but leave the stem on.

Vanilla-thyme marinade: In a bowl, mix the honey, lemon zest, chopped thyme, and vanilla pulp. Add the pears and mix well so that the marinade fully coats the pears. Line the air fryer baking accessory with parchment paper, place the pears inside, and bake for 10 minutes at 200°C. Remove the pears and set them aside.

Brownie batter: In a bowl, whisk the eggs, vanilla pulp, and coconut blossom sugar with a mixer until airy and light yellow (about 3 minutes). In another bowl, mix the almond flour, cocoa powder, and baking powder. Add this dry mixture to the egg mixture, along with the milk and melted coconut oil. Mix until a smooth batter without lumps forms.

Baking: Pour the brownie batter into the air fryer baking accessory lined with parchment paper. Place the baked pears decoratively on top and bake for 18-20 minutes at 180°C. Let the brownie cool slightly before serving.

Serving: Serve the brownie with a spoonful of vanilla sauce. Garnish with a sprig of thyme and a light dusting of powdered sugar.
