Preparation method

How do you make this?

Let the apricots simmer with the sugar, lemon, and olive oil for five minutes and mash into a compote.

Toast the slices of bread.

Top them with the roquefort and then add some compote on top.

Cut into bite-sized pieces and garnish with a leaf of chervil.
