Pita sandwiches
8 pita sandwiches

Harissa chickpeas
2 tbsp olive oil
500 g canned chickpeas, flushed
1 to 2 tbsp harissa (to taste)
2 shallots, finely chopped
2 tsp look powder
1 kl of smoked paprika powder
Juice of 1 lemon
Pinch

Cucumber salad
2 cucumbers
1 bunch of parsley, finely cut
2 tbsp vinegar
4 tbsp sesame oil

Hummus dressing
250 g hummus
Juice of 1 lemon
1 tbsp grain mustard
1 tsp cumin powder
2 tbsp tahin
50 ml of water

1 to 2 tbsp harissa (to taste)

2 tbsp vinegar
4 tbsp sesame oil

Hummus dressing
250 g hummus
Juice of 1 lemon
1 tbsp grain mustard
1 tsp cumin powder
2 tbsp tahin
50 ml of water

Preparation method

How do you make this?

Prepare the Harissa chickpeas: Heat the olive oil in a pan and add the finely chopped shallots. Let it become glassy. Then add the harissa, garlic powder and the smoked paprika powder, and fry briefly until the herbs scents. Add the chickpeas and heat them well. Deglaze with the lemon juice and season with a pinch of salt.

Make the cucumber salad: cut the cucumbers into super fine slices with a mandolin or grater. Mix the cucumbers with the finely chopped parsley, vinegar and sesame oil.

Prepare the hummus dressing: put the hummus, lemon juice, grain mustard, cumin powder, tahini and water in a blender. Mix everything into a creamy dressing.

Heat the pita sandwiches: roast the pita sandwiches in a toaster or heat them in the oven.

Compiling: fill the pitas in layers with the Harissa chickpeas, cucumber salad and hummus dressing. Add extra Harissa if you like some extra spice.
