What do you need?

Stew:
2 good lumps butter
1 kg beef stew in equal pieces, not too lean meat
2 large onions
1 thick cut bread
1 good tbsp stiff mustard
2 tbsp Liège syrup
Pepper and salt
750 ml of brown Trappist from Westmalle, at room temperature!

Fries:
1 kg of fries patients

Chicory salad:
6 thick chicory stumps

Fresh mayonnaise:
All ingredients at room temperature
1 egg
1 tbsp mustard
Pepper
Salty
SAP V 1/2 lemon
1 tbsp vinegar
250 ml of corn or sunflower oil

Preparation method

How do you make this?

First finely chop the onion and fry in butter.

Let the butter frame separately in a stew and color each piece of meat nicely around good brown.

Don't suddenly put too much in the pot.

Add the meat to the onions and deglack your pan with the beer.

Season with salt and pepper, add thyme and bay leaf and also the warm brown beer.

Coat the mustard on the cut bread and add it.

Add the pear syrup and let it simmer for an hour or 2.

The cooking time will depend on the quality of the meat.

Put all the ingredients for the Mayo in a high measuring cup that fits your hand blender.

Place the hand blender on the bottom of measuring cup and pull slowly up, mix until everything is nicely connected, taste and season, store in the fridge in a jar with lid.

Finely chop the chicory and mix 2 thick scoops mayo.

Peel the potatoes, cut into fries, rinse and dry them.

Bake for 150 ° for 5 minutes until they feel soft.

Place on kitchen paper, do not bake with too much at once.

Once stew is soft, you can bake the fries.

Heat your fryer at 180 ° and fry the fries nicely golden brown and crispy.
