200 gr. dates without spice, soaked in water for 30 minutes (Medjoul)
50 ml agave syrup
250 ml extra virgin olive oil
1 vanilla sock

Seasonal fruit
strawberries, blueberries, red berries, blackberries, raspberries

Coulis
150 gr. strawberry
100 gr. Red Berries
2 tbsp mascarpone

Garnish
few sprigs of mint

Preparation method

How do you make this?

Cake: Mix the eggs, dates, agave and vanilla energy to smooth mass.

Put the whole -grain and almond flour in a mixing bowl.

Add salt and olive oil.

Pour in rectangular cake mold (30 by 12) covered with baking paper.

Leave 40 minutes at 160 ° C. Pick in the cake, if the dough does not stick to the skewer, it is ready.

Allow to cool.

Cut in squares.

Wash all the fruit and alternate fruit and cake on the skewers.

Coulis: Mix the strawberries, drained red berries and the mascarpone with hand blender.
