150 g Roquefortkaas
1 shallot
50 ml madeira
150 ml room
150 ml Demi Glace or Brown Fond
1 knob of butter

Preparation method

How do you make this?

Finely chop shallot and color in the knob of butter. Deglaze with madeira, add the cream, the stock and slightly more than half of the cheese. Let it boil for 5 minutes, add the rest of the cheese in kibble on the latter.

Taste and season with salt and pepper if necessary.
