Beat the egg whites and add the warm sugar. Beat until you no longer feel sugar granules when you rub a dash between thumb and forefinger. This takes about 10 minutes.
Mix the sodium carbonate, cornflour and salt. Sift the mixture over the protein and mix. Add the vanilla and vinegar and mix well. Draw a circle on your baking paper to more or less define your Pavlova, turn the paper over and scoop the protein foam on top. It doesn't have to be perfect or fancy, because Pavlova has no perfect shape.
Bake the Pavlova for twenty minutes at 150 ° C and another 40 minutes at 130 ° C.
Remove from the oven and let cool. Turn the Pavlova on a dish. So the bottom becomes the top!
Beat the whipped cream and sour cream with a tablespoon of sugar very lumpy. Divide the mixture, not too neat, over your fried protein base.
Sprinkle the red fruit over it and spoon out the passion fruit.
