Add the almond flour, matcha, baking soda and salt in a measuring cup. Beat until the mixture is evenly distributed.
Add the maple syrup (or sweetener of your choice), coconut oil, vanilla powder and the egg. Beat the batter until smooth.
Pour the batter into a microwave permanent mug.
Place the mug in the middle of your microwave (the cake rises more evenly) and cook at high setting for 1-2 minutes. (With a microwave of 900 watts, the cake is ready after 90 seconds. Adjust the cooking time based on the power of your microwave - shortens the time with a more powerful microwave and extends with a less powerful microwave.)
The Matcha mug cake is ready when it comes up and a toothpick that is stabbed in the middle comes out clean.
Allow the cake to cool for a few minutes and top possibly with a scoop of ice cream and cherry. Enjoy!
