SOIL
150 g letter cookies
80 g melted butter
½ teaspoon of salt

Chocolate-speculaas mousse
200 ml of milk
150 g speculaasjes, in pieces
230 g dark chocolate
300 ml of cold cream, half beaten

TOPPING
Extra letter cookies and chocolate
spring form of 18 cm diameter

Preparation method

How do you make this?

Cutter the letter cookies finely. Add melted butter and cutter again until you have a fine mass. Pour the bottom into the spring form with a baking paper in between, push well and let it set in the fridge for at least 1 hour.

Put the milk in a high measuring cup and add pieces of gingerbread. Let it stand for 5 minutes and mix with a hand blender.

Melt the chocolate au bain-marie or in a large bowl in the microwave. (If you use the microwave, stir regularly!) Add the melted chocolate in twice to the half -whipped cream and stir well after each addition. When it is almost completely mixed, the gingerbread can be added.

Pour the mixture on the resolved letter cookie floor and spread it smoothly. Let it set in the fridge for at least 3 hours. Cut the sides loose with a fine knife or immerse in warm water.

If necessary, decorate with letter cookies and pieces of chocolate.

Cut the portions with a warm knife.
