Cut the mozzarella in 4, put it in the cutter. Add the ricotta and olive oil.
Season with black pepper and fleur de sel. Cutter everything to a whipped mass. You can always add some juice from the mozzarella for a more creamy structure.
Divide the pasta, tomatoes and fried sausage into large glasses. Do the whipped mozzarella on that. Finish with pine nuts and basil leaves.
