1 scoby (mushroom)

Preparation method

How do you make this?

Warm the water up to 90 ° C, then add the tea and sugar and let it draw for 20 minutes.

Sieve, pour into a clean glass bowl and add the scoby. Be careful: the tea may not be warmer than 40 ° C because otherwise the Scoby will die. So wait until it has cooled completely.

Store at room temperature for 2 weeks to the taste is at the maximum.

When it is ripe, pour it into bottles with fruit or herbs of your choice for the second fermentation. Save cold.
