Gently bring the chicken broth to the boil.
Meanwhile, cut the shiitake into slices and add them to the broth with the beans and ginger. Let it cook for 1 minute.
Make noodles from the zucchini with a spiral cutter or with a mandolin. Or cut fine slices with a peeler.
Add and let it boil for another 1 minute.
Serve in bowls.
Finish with finely sliced mint and some drops of sesame oil.
