400 gr pea
600 gr flower potatoes

Preparation method

How do you make this?

Prepare: Turn on the fryer and let it heat up to 180 ° C.

Peas: Cook the peas briefly in boiling water with a pinch of bicarbonate and immediately scare them in cold water. Drain.

Potatoes: Peel the potatoes and steam them.

Onion rings: Cut the onion into rings about half a cm thick and let them soak in the milk for 10 minutes.

Pat the onions well dry, pass them through the flour and fry them for about 3 minutes. Drain on kitchen paper and sprinkle with salt.

Hamburgers: Season the minced meat with salt and pepper, mix well and shape beautiful, not too thin hamburgers.

Melt a knob of butter in a pan and fry the Saignant hamburgers. Remove from the pan and place a slice of cheese on every hamburger. Deglace the pan with brown stock.

Puree: melt a knob of butter in a pan and fry the peas briefly. Season with salt and pepper.

Drain the potatoes and add them to the peas. Stamp them together into a coarse puree. Add buttermilk and season with pepper, salt and nutmeg.

Mirror eggs: Place 4 serving rings in a pan and put a knob of butter in it. Break each egg into a small bowl and carefully pour into the serving rings. When the protein is solidified, remove the pan from the heat.

Serve: Serve the puree with the hamburger with cheese, place the fried egg and the onion rings on top. Tasty!
